Cafe' Rio Salad

I found this recipe on line and it's pretty darn good.

Cafe' Rio Chicken

1 bottle of Italian Zesty Dressing
1 TBS Chili Powder
1 TBS Cumin
3 cloves garlic-minced
5 TBS Chicken Breast


Cook all together in a crockpot for 4 hour on high, shred and cook an additional hour.

Cafe' Rio Rice

3 C Uncooked Rice
2 Garlic Cloves
4 C Water
4 tsp Chicken Bouillion
1/2 C Cilantro
1 can Green Chili's
3/4 tsp Salt
1 tsp Zest of Lime
2 TBS Lime Juice
2 tsp sugar
1 TBS Butter
1/2 Onion chopped


Saute onions and garlic until soft add rice and water. Add all ingredients and bring to a boil. Reduce to low and cover about 20 min.

Cafe' Rio Black Beans

1 can Black Beans
1 1/3 C tomato juice
2 cloves Garlic
1 tsp cumin
2 TBS Olive Oil
1 1/2 tsp Salt
2 TBS fresh Cilantro


In Non-stick skillit cook garlic and cumin in olive oil until it smells. Add beans, tomato juice and salt. Stir until heated through. Then add cilantro.

Pork

3 Lbs pork roast
16 oz Chunky Salsa
1 can coke
2 cups brown sugar


Cilantro Dressing

1 pkg. Dry Hidden Valley Ranch
1 C Mayo
1/2 bunch Cilantro
1 Large Garlic Clove
3 tomatillos
1/3 C Buttermilk
1 juiced lime
1/2 tsp. red pepper flakes


Blend in Blender all together and place in Fridge until thick.

Salad Assembly
Tortilla - Sam's club is awesome
Shredded Cheese - Colby Jack and Monterray Jack
Rice, Beans, Pork/Chicken, Lettuce
Pico De Gallo - Sam's some great stuff
Guacamole, Feta Cheese, Cilantro, Lime Wedges
Tortilla Strips, Cilantro Dressing

Burritro

Totilla, Rice and Beans, Pork, Cheese, Roll it up!

Darren actually looked away from the Jazz game when he saw "Cafe Rio Salad" out of the corner of his eye. Good Job! I'll have to make it.
